Caribe Organic Heirloom Potatoes are large with lavender skin and white flesh good boiled, steamed or mashed. The snow white flesh makes beautiful, fluffy mashed potatoes. This very early variety is a must for every garden. Caribe is an excellent new potato and does well as a frying or baking potato too. A superb yielder, Caribé will produce well in a variety of soils, but this potato is not a good keeper. It is resistant to heat, drought, scab and storage rot. Ideal for the home garden and grows almost anywhere. Don't refrigerate them doing so converts some of the potato's starch to sugar. And don't expose them to direct sunlight, which turns them green and makes them bitter. When storing, make sure the temperature in the area is about 45 to 50 degrees F.
