Irish Cobbler Organic Heirloom Potato is a well respected heirloom that has white skin with deep eyes and mealy white flesh. It has a slightly flattened, oblong shape and is a good masher. The major advantages of Irish Cobbler are its earliness, culinary quality, and it is hard to beat as a general purpose potato! It is resistant to mosaic and susceptible to scab. Producing consistent yields, it can be grown anywhere. The plants are medium in size, erect to spreading. Stems are thick to medium and are prominently angled. Don't refrigerate them doing so converts some of the potato's starch to sugar. And don't expose them to direct sunlight, which turns them green and makes them bitter. Avoid storing potatoes with onions because, when close together, they produce gases that spoil both. Store potatoes in a cool, dark, well ventilated area.
