Viking Purple Organic Heirloom Potato has a very large, smooth, dark purple skin and pure white flesh. Its excellent flavor is great for mashing, and it is quickly gaining the reputation of a great tasting, slightly sweet, general purpose potato. Viking Purple is very early, has good storage and is drought resistant. Average tubers are 3½ 4 in diameter, but in a good year it can produce even larger tubers. This variety produces what some call “lunkers”, large oversize potatoes, so plant close 8” 10” to control size. This small to medium spreading plant has some resistance to leafhoppers. This high yielding potato was developed at North Dakota State University in 1962. Don't refrigerate them doing so converts some of the potato's starch to sugar. And don't expose them to direct sunlight, which turns them green and makes them bitter. They should be kept in a cool dry area, away from light a cellar is ideal.
