The French Fingerling Organic Heirloom Potato is of gourmet quality with smooth red skin and yellow flesh. There is usually a little pinkred ring just under the skin. It is a tender potato, and the skin is so delicate that peeling is not necessary or recommended. It is versatile and good for any style of preparation. The French Fingerling produces good quality, medium to large sized tubers, which are a great addition to any plate. These tubers have become a mainstay on menus at chic restaurants. Their unique flavor is part of the pleasure, and their hold together texture is enticing, too. Store unwashed fingerlings at room temperature in a dark, cool, airy location, such as in a basket or open paper bag. Do not store in a sealed plastic bag. It is rumored that this fingerling arrived in this country in a horse’s feedbag!
